Chickoo Ensemble
Ingredients for Rabdi:
2ltr Milk
100.0gms Castor sugar
10.0 gms Green Cardamom powder
A pinch of Saffron
Ingredients for Chickoo Semifredo:
400.0 gms Chickoo
200.0 gms Milk Maid
200.0 gms Whip Cream
50.0 gms Castor sugar
Method
- First Remove the ripe Chickoo pulp and puree it
- Add milkmaid, sugar and whipped cream to it
- Whisk the mixture in a bowl and freeze it
Ingredients for Cashew Crumble
100.0 gms Cashew
50.0 gms Sugar
Method
- Make cashew nut powder
- Mix it with the sugar syrup made with above sugar
- Bake in an oven until become brown
For Garnish
- Chopped pistachio
- Dried Rose petals
Method to assemble the above dessert:
- On a flat Plate put two spoons of Rabdi in the centre and spread it
- Place the Frozen semifreddo on it
Garnish with some diced Chickoo, Chopped pistachio Cashew Crumble & Dried Rose petals
